EGG DROP CURRY WITH COCONUT MILK
Egg drop curry made with coconut milk is a simple preparation for the days you want to fix a quick lunch or dinner. It is a good change from the usual curry made with boiled eggs. This way the eggs absorb the spice flavours while simmering and really taste very delicious. This curry can be served with rotis or rice and you can adjust the gravy accordingly.

AMRITSARI METHI MALAI MURGH
Amritsari methi malai murgh is a rich and creamy chicken dish with the flavours of kasoori methi and spices. It goes well with naans, tandoori and roomali rotis.

MUJ GAAD / KASHMIRI FISH WITH RADISH
Muj Gaad is a Kashmiri Pandit delicacy. Deep fried fish and radish pieces are cooked together with Kashmiri ver masala and other spices like powdered fennel, Kashmiri chilli powder and asafoetida.
Mustard oil is preferred for this preparation. This is usually served with rice.

SRILANKAN CHICKEN CURRY
Here is a recipe of delicious Sri Lankan Chicken Curry. This is one of my favourites as it has a nice and flavourful gravy to go with plain rice. The freshly grounded spice mix adds to the flavours. My version is not very hot as I have used Kashmiri chillies for the colour. You can increase the spice level by adding spicy variety of red chillies if you like.

NILGIRI MUTTON CURRY
This delicious curry is from the Nilgiri Hills (Ooty) in South India. It is flavoured with mint and coriander leaves. Yogurt is added for tanginess. You can relish it with plain rice, dosas and appams.

DHANIWAL KORMA / KASHMIRI LAMB CORIANDER KORMA
Dhaniwal Korma is a flavourful lamb curry from Kashmir. It has a rich and creamy gravy with nut paste and flavoured with spices and saffron. You can relish it with Khamiri roti or Kashmiri pulao.

KONKANI MUTTON CURRY
I like trying out traditional dishes from various regions. I specially love the non-veg curries from the Southern Coastal regions. Most of them are coconut based and spicy and can be served with rice, akki rotis, dosas and appams.
