SWEET POTATO CUTLETS / NAVRATRI SPECIAL / FARALI CUTLETS





Sweet potatoes are an easy-to-prepare root vegetable, filled with vitamins, minerals, fiber, ... They'll fill you up and meet your nutrition needs. These can be had on fasting days too.
Here is a Farali cutlets recipe  I have added a little bit of grated carrots for colour and boiled potatoes for binding as many people not eat any bread during the fasting period.

GOBHI 65





This is inspired from a South Indian spicy non veg snack, Chicken 65. Vegetarians can replace the chicken with cauliflower and relish it too.
This is a nice and crispy snack and has to be served immediately after making. You can half fry the florets with the batter and do the finishing touches just before serving.

Try out this Indo-Italian fusion pasta recipe. It tasted so delicious. You can use any variety of pasta of your choice.

NOODLE DOODLE / NOODLES STUFFED POTATO ROLLS





Noodle Doodle is a snack that all the kids will surely love as they are so fond of noodles. Vegetables and noodles are stuffed into potato rolls and deep fried to a crispy texture.

DAHI VADA KULFI






If you have some leftover dahi vadas from a party you can give them a makeover and serve in some innovative way. I have lightly mashed the vadas and set them in kulfi moulds. Place them in the freezer until they are firm and easy to unmould. You don't have to completely freeze them to a solid form like a kulfi. Garnish and serve.

ONION RAITA SANDWICH






Have you ever tried making sandwich with the leftover raita.. It really tastes good.



Ingredients:

(For 1 sandwich)

Onion raita ............. 3-4 tbsps

Bread slices ... 2

Cherry Tomatoes .. for garnishing



Method:





1. Bring the leftover raita to room temperature.





















2. Spoon it on a bread slice.





















3. Place the second slice on it.

IDLI BURGERS







Idli burger, a mouth-watering delicacy which no one can resist. It is a fusion burger made from leftover idlis..It is a very simple and easy recipe to prepare and the kids will surely find this attractive.

KEERAI MURUKKU / PALAK CHAKLI

VEG NARGISI KABABS





This is an interesting recipe that I tried out recently for an event. The theme was potato. I chose small, oval egg shaped potatoes and used soya granule masala for the covering. Egg yolk was made with mashed paneer and potato to which I added organic yellow food colour. The snack really looked very nice. It is a lovely party snack for vegetarians.

Potato parcels are perfect to make for kids party. It is a simple snack made with bread slices, mint chutney, tomato ketchup and mashed potato for the outer covering. I am sure kids are going to love these cute parcels.

AKHROT KE KABAB / WALNUT CUTLETS





Akhrot kabab is one of the tastiest and rich snack from the Mughlai Cuisine made with walnuts, cashews, almonds, mawa and paneer. I have added a spoonful of Tangier spice mix which  adds to the flavours.  It is the most delicious vegetarian kabab I have ever tasted.

RAJMA FALAFEL WITH RAGI PITA





Traditional falafel is made with chickpeas/garbanzo beans. I have tried making them with rajma (red kidney beans) for a change and served them with ragi/finger millet pitas. Though the pitas were not so fluffy like the ones we make with flour but they tasted good. They actually tasted like bhakris.

PULL APART PIZZA MONKEY BREAD

HERBED ROASTED POTATOES GREEK STYLE WITH FETA CHEESE





These flavourful potato wedges baked with garlic and herbs and really delicious served hot out of the oven and topped with crumbled feta cheese.

COLOURFUL SWIRL MATHRIS FOR HOLI / SPINACH CARROT AND BEETROOT MATHRIS





Any festival is incomplete without sweets and snacks. As Holi is the festival of colours I made some colourful swirl mathris without the addition of food colours using the pureed spinach, beetroot and carrots to knead the dough. To make them extra healthy I have also added wholewheat flour to the maida.
